Our swordfish is sourced from the Central and Southwest Pacific Ocean quadrants because it is more responsibly harvested and sustainably managed here than it is in other parts of the Pacific. The swordfish coming out of Hawaii is superior in quality than, and preferred over, foreign imports; and, Hawaii is a major source for our fresh swordfish. Swordfish is caught at night, preferably under a full moon, with shallow-set longlines. We receive fresh shipments of swordfish daily and we cut-to-order the fish for same day outbound shipments.
