We source high-quality Pacific swordfish out of the Central and Southwestern Pacific, but ideally out of Hawaii. It is portioned, brined, dried, and then smoked with Apple and Alderwood at our facility in Seattle. Our Smoked Swordfish is produced in small to medium-sized batches to ensure quality.

The consistently excellent quality of Hawaiian swordfish is unmatched anywhere in the world. The well-managed fishery (by NOAA and the Western Pacific Management Council) is sustainable, the fish handling practices are meticulous, and the time-to-market is rapid. Hawaiian swordfish goes through the Honolulu Fish Auction where wholesalers quickly acquire fresh product and fly it to us when available. Otherwise, we will source Sword out of Tonga and Fiji - Oceania.
